Satay Noodles Comfort Delight

  • Ingredients
    • 250g rice noodles or rice sticks
    • 2 tablespoon toasted sesame oil
    • 6 spring onions chopped (including green stalks)
    • 200g mangetout halved
    • 200g chinese leaves (tear into shreds)
    • 100g radish chopped
    • Sauce
    • 2 heaped tablespoons crunchy peanut butter
    • 1 tablespoon dark soy sauce
    • 1 tablespoon rice or wine vinegar
    • 250ml sherry
    • 1 teaspoon brown sugar
    • 1 garlic clove or garlic puree
Preparation Method
  1. Directions Mix sauce ingredients in bowl and microwave for about 2 minutes stirring occasionally, Sauce will thicken. If too thick add water or more sherry as desired. Heat sesame oil in wok or large pan until hot. Add veg and stir fry until heated through. Add sauce and mix thoroughly. Put noodles in large pan and cover with boiling water. Leave for about 4 minutes, or follow pack instructions. Drain noodles and serve on warmed plates. Add sauce either to the side or on the noodles. Sauce can also be stirred into noodles if desired.
