Rocky Road Granola

  • Ingredients
    • • 2 tbsp vegetable oil
    • • 125ml maple syrup or golden syrup
    • • 2 tbsp honey
    • • 1 tbs vanilla extract / essence
    • • 300g oats
    • • 50g sunflower seeds
    • • 4 tbsp sesame seeds
    • • 50g pumpkin seeds
    • • 100g flaked almonds
    • • Handful of your favourite nuts
    • • 100g dried berries (find them in the baking aisle)
    • • 50g coconuts flakes or desiccated coconut
    • • Cinnamon and nutmeg 1 tablespoon of each
    • • Handful of crushed Oreo Cookies
    • • Handful of mini marshmallows
Preparation Method
  1. 1. Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup / golden syrup, cinnamon, nutmeg, honey and vanilla in a large bowl. Tip in the sunflower seeds, sesame seeds, pumpkin seeds, almonds and the mixed nuts.
  2. 2. Tip the granola onto two baking sheets lined with baking parchment and spread evenly. Bake for 20 mins, then mix in the coconut, and bake for 20 mins more. Remove and scrape onto a flat tray to cool. Add mixed fruit, crushed Oreos and mini marshmallows once the granola has cooled. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month. 3. NOTE: The recipe can be halved to make a smaller batch of granola!
