Rustic Italian Tomato & Balsamic

Taken from the Modena region of Italy. This is a simple but classic soup. Roasting the tomatoes is the key to getting the sweetness from the tomatoes, combine this with some garlic, herbs and then the balsamic vinegar to cut through the richness. This is a soup where less is more, we have left the soup deliberately lumpy, letting the roasted tomatoes melt into the soup. For this reason you may find the occasional tomato stem. 

Vegetable Stock (Contains celery), Whole Roast Tomatoes (11%), Tomato Paste (8%), Tomato (8%), Potato, Onion, Single Cream, Sugar, Carrot, Celery, Balsamic Vinegar of Modena (0.8%), Parsley, Salt, Sundried Tomato Paste, Basil, Cornflour, Garlic Puree, Rosemary, Concentrated Lemon Juice, Nutmeg, Fennel. Vegetable Stock contains Water, Concentrated Vegetable Juices (Onion, Carrot, Leek, Celery, Garlic), Sugar, Salt, Corn Starch, Sunflower Oil, Spice Oils. Sundried tomato Paste contains Sundried Tomatoes (Sundried Tomatoes, Water, Salt), Rapeseed Oil, Wine Vinegar, Sugar, Salt. Balsamic Vinegar contains Wine Vinegar, Grape Must.

I contain Celery and Milk. I've been known to hang around near Nuts, Peanuts and Sesame Seeds and I may contain them as well.
